58 MEET LAURA JANE OF DELUCE CAKES Where did your journey into cake creation begin? In 2014, I decided a corporate career wasn’t for me, so I took a leap of faith, quit my job and enrolled at Le Cordon Bleu London culinary school. I fell in love with everything patisserie. Soon after graduating, a friend asked if I would make her wedding cake. That is where my cake journey truly began. I realised that combining my skills with limitless creativity was my vocation. What’s your favourite thing about working in the wedding industry? Every couple, wedding and cake is different, so it never gets boring. What sweet treat do you turn to for comfort? It will sound strange, but I don’t have a sweet tooth – perhaps because I’m surrounded by so much cake! If I do fancy a sweet treat, a few squares of dark chocolate hits the spot. What’s your top wedding planning tip? Enjoy the process! It’s easy to get so wrapped up in the planning that it becomes stressful and you forget what it’s all about. I always dabbled in cake making, but my previous careers as a biomedical scientist and headhunter made it impossible for me to make cakes as well. A milestone birthday made me decide to become a full-time cake designer, and I’m proud to have built a reputation for amazing, luxury cakes. What’s your favourite thing about working in the wedding industry? Without my clients and industry colleagues I have no business, so I’m grateful for the opportunity to work with some wonderful people in the most awesome venues in the world. I’m able to draw on their ideas to create my elegant designs. What sweet treat do you turn to for comfort? This is tough considering we create more than 50 flavours. Don’t tell the other flavours, but lemon is my favourite. The balance of tanginess and sweetness does it for me. What’s your top wedding planning tip? Don’t forget to order an incredible cake – it’s the only guest at your wedding with its own table! I used to love baking with my granny, and I’d always dreamed of being a cake maker. A few years ago, I created my sister’s big-day bake; luckily it was a success, and I haven’t looked back. What’s your favourite thing about working in the wedding industry? I love getting to know my couples and understanding their vision for the day. It’s so much fun working together to create a bespoke showstopper that truly reflects them. You realise that everyone involved are cogs in the same wonderfully happy wheel. What sweet treat do you turn to for comfort? I can always polish off some dark chocolate. What’s your top wedding planning tip? Remember some things are out of your control.
