Sear brings together Joe's farming background, with Ryan's experience of cooking alongside highly trained chefs in restaurant kitchens. Award-winning, Oxfordshire-based Sear Events delivers delicious new menu additions Sear Events is a bespoke catering company offering menus for small, intimate celebrations and large affairs. Whether it’s a barbecue or a seated wedding breakfast with multiple courses, founders Joe Horner and Ryan O’Linn work closely with local suppliers to offer the best ingredients. They have catered for hundreds of weddings across the country, and take pride in offering every couple a tailored package to suit their needs. Joe tells us, “I get involved in every part of the process from prepping food to communicating with new clients. I love being able to visit new locations by working at weddings, and engaging with guests as they eat our food. Seeing the happy couple beaming after their meal always makes it worthwhile!” Sear Events predominantly works across the home counties and Oxfordshire, but the team will travel further for large events. Joe advises couples planning their big day to focus on the food they love, and dishes that bring back good memories. “A wedding should be about the couple’s journey, and food is a big part of that,” he says. “Engage with any prospective caterers and ensure they are passionate about your celebration.” Joe adds, “Interactive food stations and live fire cooking are becoming increasingly popular at weddings, plus pistachio with everything! Our new wedding menu additions include a canapé of smoked salmon pâté croustade with pickled fennel and lemon zest; and a starter of smoked mackerel with lime crème fraîche, pickled cucumber, rosemary focaccia and cress. A new side for the main course is spiced and charred corn with avocado purée and lime and mint yoghurt with green onion and herb oil.” One of the signature dishes from Sear Events is a sirloin of beef finished over hardwood and lump charcoal on a custom live-fire cooking rig.
