We’ve all been to a wedding, so put your hands up if you agree that by far the biggest slump for a guest is post ceremony. You’re handed a glass of alcohol, but the tummy has started to rumble, and the happy couple have disappeared with their photographer for what seems like hours on end while all you can think about is when the wedding breakfast is coming. “The drinks reception lends itself perfectly to serving canapés,” Rebecca says. Tried and tested, these mini morsels can be created to reflect your favourite flavours or theme. What about mini fish and chips cones if you’re saying “I do” by the seaside, or burger sliders for an al fresco summer vibe? “Also, into the evening, when all the guests are on the dancefloor, a late-night snack is always a great choice!” Rebecca continues. “Once the evening has ended, during a night cap with your nearest and dearest, a cheeseboard is a popular choice to help with the midnight munchies too.” How can we cater for guests with dietary requirements? “Leave this to us!” says Steve Mayo from Good Food Story (www.goodfoodstory.co.uk). “We ensure that every single guest is served amazing, delicious food without any fuss, no matter what their dietary requirement is. The common requests are gluten free, vegan, vegetarian, pescetarian, dairy free, and there are many guests with religious dietary requirements too. There are also guests with allergies and intolerances and many variations on all of these. We can even look after a fussy best man who doesn’t eat anything other than chicken goujons and pizza (and we’ve had a couple of them!). No request or requirement is too far for us to go, because we want every single guest to have the very best day, be blown away by the food, and able to relax knowing their needs are catered for properly. It does take some work from the bride and groom to ask guests the questions and gather the details for us, and if it’s a complicated request we will then need to liaise further with the guest directly. There is then a lot of behind-the-scenes planning and preparation between our event managers and our chefs to ensure we can seamlessly deliver all the different dishes and variations on the day, to exactly the correct guest at exactly the right time.” Does evening food have to be a buffet? “Nope!” Rebecca says. “A relaxed selection of lighter options served to guests is an ideal way to keep the dancefloor full and energy up. Other popular options are a selection of wood-fired pizzas, cones of fish and chips, and even a bacon sandwich. Liam, one of our experienced events managers would recommend adding a couple of options to your evening food to allow for a variety.” In fact, as Steve tells us, their evening suppers generally aren’t buffets at all these days! “More often we’ll be serving street food snacks, moreish bowl food, or crowd-pleasing simple classics,” he says. “All are brought to you and your guests, wherever you are. No queuing up or missing out! The big evening cold buffet, which was a standard at every wedding back in the day, has been replaced with food that has personality and an instant wow factor, with bold flavours that will make guests smile, giving them an instant energy boost. Say “no” to heavy, sleepy overindulging buffets, and yes to fun, Instagramable suppers, where the food is wolfed down before the partying re-commences.” How can we personalise our food? In much the same way you determine the vibe of your wedding, you can ensure that your first meal together as marrieds reflects the two of you. “A bespoke menu is a great way to personalise your wedding breakfast,” Rebecca says. “Adding your favourite dish or including a menu chosen by each of you, is a lovely way to bring a bit of personality to your day.” Steve says, “We love nothing more than to create bespoke and personal menus for our couples, be it using grandma’s recipe for your favourite dessert, taking inspiration from your honeymoon destination for 48
