CAKES 87 VICTORIA GREEN AT THE COUTURE CAKE COMPANY Where did your journey in to baking begin? As a child I always enjoyed baking with my mum, orange cake, upside down pineapple cake and of course our traditional Christmas cake. Roll forward a few years and a friend asked me to make a cake for her boyfriend’s birthday. I’d never decorated a cake before but I thought I’d give it a go. At the time I absolutely loved my creation and it gave me the passion to keep baking and trying new designs. Soon more and more friends and family were asking me to design and make celebration and then wedding cakes for them. In 2011 I started up The Couture Cake Company, and haven’t looked back since. What do you love most about your job? I love designing cakes from scratch for couples, taking their ideas and creating a design that captures both them and their special day. It’s so lovely to see some couples going for truly unique designs. Favourite cake design: I absolutely love this design, it has so many of my favourite flowers and colours in it, the mixture of blooms make them look quite realistic and the intricate piping adds more detail but without making the cake appear too busy. Top tip: Try to enjoy the process as much as possible. Ask ask ask questions! That’s what we’re here for, each and every supplier wants you to have the best day possible. Also it’s important to have what you truly want, even down to the cake flavours. Often with your wedding cake too, it’s the perfect opportunity to throw in a personal touch. Go-to comfort-eating dessert? Something with homemade custard on or most definitely cheese! Quite possibly the only wedding cake designer without a sweet tooth! I have always loved baking and think back fondly to all the cakes and baked goodies that I made with my grandma at weekends as a child. My love of cake decorating started when I made my son’s first birthday cake. I caught the decorating bug, was soon creating cakes for friends and family who encouraged me to start my own business and here I am! What do you love most about your job? My favourite part of the process is when I stack the cake at the venue, add the finishing touches and step back to see how it has come together. It’s really satisfying to see designs I’ve worked on with my couples to make them unique to them and their special day. Top tip: Choose wedding suppliers that have a similar taste in style/design as you – people always do their best work when it’s something they love! Favourite cake design: I actually have a few for very different reasons; but this one, a semi-naked cake, even with the simplicity of the cake itself, it still breaks away from the norm and makes a statement with the bold tropical sugar flowers and foliage. I like to add a nice pop of colour to a cake and with this cake I particularly liked taking some traditional elements to match the wedding theme and adding a modern touch to it. Go-to comfort-eating dessert? Anything chocolatey! Even with all the cakes I make, I could never get fed up of eating a rich, fudgy chocolate cake or brownies. I started my business in 2011, firstly making celebration cakes and cupcakes mostly for friends and family while my business was small and a year later I made my first wedding cake. Since then I have never looked back and just loved being able to do something that I love as my actual job. What do you love most about your job? My favourite part is making lots of lovely pretty sugar flowers to dress the finished cake with. But I also love covering the cake in icing and giving them a flawless finish it’s quite satisfying. Favourite cake design: This is a really hard one for me as I have made quite a few lovely designs recently. But I do love grey, lace and sugar flowers and I just adored how this one came together in the end. Top tip: A top wedding tip for couples would be on the day just take five mins to yourselves to just take it all in as the day will go so quickly. Go-to comfort-eating dessert?
