Food is my favourite subject, so when the time comes around to put together our annual catering feature, it’s always a joy. The reason it’s so exciting to write is the sheer wealth of options available across the county, which never ceases to amaze me. When I think of wedding food, I must admit it can trigger thoughts of weddings from back in the day, where we sat down to a depressing meal of bland chicken or bust! But I soon remember, wedding catering isn’t like that anymore... mercifully! While the range of choice might make the process slightly more complicated, it is nevertheless, 100 per cent worth it. So, with the help of local caterers, we’ve put together a guide that ensures all your questions are answered. Now, more so than say 20 or 30 years ago weddings are all about their couples. There are so many more ways to bring about the ultimate in personalisation and nowhere is this truer than in the world of wedding food. Catering companies are led by unbelievably talented chefs who can just as easily whip up your favourite dish as they can serve something from their own delicious menus. What’s more, dietaries aren’t a problem, when creative, knowledgeable minds are at the helm. So, the key takeaway here is: don’t be afraid to ask. After all, the age of the foodie is upon us, so find a caterer that suits your tastes allowing you to work with your dream team to create something your guests will be talking about for years to come. This issue, we’re also taking a peek into the world of al fresco weddings. Our experts have helped us to create the ultimate mood board to inspire your outdoor wedding style whether it be something relaxed or more formal. So, I hope you love this issue as much as I loved putting it together, and as ever... enjoy and keeeep planning! Catch up on the latest from around the county NEWS GIVING BACK Elite Hotels, a privately-owned collection of three individual and distinctive hotels in Sussex and Hampshire, recently announced its charitable partners for 2025/26. This year, the group including The Grand Eastbourne and Ashdown Park in Sussex, is proud to be supporting the life-saving work of the Air Ambulance associations serving the communities of Hampshire and Isle of Wight, and also Sussex, Kent and Surrey. Throughout the year, to support the charities in question and raise vital funds, Elite Hotels has a variety of exciting initiatives from meet and greets to a sponsored run, a gala dinner to CPR training sessions. A spokesperson for the Kent, Surrey and Sussex Air Ambulance Service says, “We’re really looking forward to working with Elite Hotels over the next year. As an independent charity, we can’t save lives without the support of the organisations in our shared community. It costs £56,000 a day to run our lifesaving service, and most of that is funded by the communities we serve.” To book a stay or your big day with an Elite Hotels venue in Sussex, visit www.grandeastbourne.com or www.ashdownpark.com Nearlywed IN YOUR COWBOY ERA? Sussex-based jewellery brand Posh Totty Designs has recently launched The Wild Collection, the result of a collaboration between Alice Rivers-Cripps, founder and creative director of Posh Totty Designs, and model and presenter Hannah Cooper-Dommett. The collaboration was born from Hannah’s desire to fill a gap in her own jewellery collection: timeless, soulful pieces with a vintage edge and a free-spirited feel. Together with Alice, she set out to create designs she was craving but couldn’t find anywhere else. Inspired by Hannah’s personal style, creativity, and freespirited approach to life, The Wilde Collection celebrates individuality and the courage to embrace your unique sense of self. It features 30 pieces, including such key designs as the My Guiding Star Necklace, Americana Retro Name Necklace, Organic Bolo Tie Necklace, and Stay Lucky Horseshoe. Crafted with sustainability in mind, all pieces are handmade in the UK in Posh Totty’s Brighton workshop using recycled sterling silver and 9ct gold, and ethically sourced gemstones. Many designs can be personalised to make them even more special, with options for birthstones, engraved names, or meaningful dates. Shop the collection at www.poshtottydesigns.com A TRUE BRIGHTON JEWEL The Music Room in the Royal Pavilion isn’t only one of the most opulent rooms in the palace itself but in Brighton as a whole. The space is only bookable for wedding ceremonies from 6:30pm onwards, however, due to this time restriction the venue is now offering a ceremony in the grand and elegant space for only £2,760 (including VAT), which is almost half the rate previously charged. “We’ve already noticed this has proven popular with couples who are less concerned about a traditional format but very much want a grand space for their big moment,” the Royal Pavilion’s David Purdue told us. A TRUE LOCAL TALENT If, like us, you’re an avid follower of the BBC’s Great British Menu, you’ll have no doubt enjoyed cheering for Sussex’s local representative, Restaurant Interlude’s executive chef, Michelin-starred Jean Delport. Now in its 20th anniversary year, the show invited the UK’s top chefs to create dishes inspired by this year’s theme: historical figures from the past of their region. The winning dishes were served at a magnificent banquet at Blenheim Palace. We’re happy to report that exceptionally talented chef Jean won an incredible two courses through to the banquet: fish (‘An ode to Elizabeth...’ inspired by British cookery writer Elizabeth David) and main course (‘There and back again’ inspired by British abolitionist, writer and composer Charles Ignatius Sancho). Speaking about the brief, Jean said, “It was particularly exciting as it allowed me to draw on the rich history of London and the South East, while still staying true to my style of cooking, elevating ingredients from the land around us and telling a story through my dishes.” Located in the Leonardslee Gardens estate in West Sussex, Restaurant Interlude offers a truly immersive dining experience, where guests enjoy a carefully curated tasting menu inspired by the landscape. Each dish tells a story of the estate, with foraged elements from the woodlands, lakes, and gardens appearing throughout the menu. The restaurant holds one Michelin star and a Green Michelin star, recognising its commitment to sustainability and local sourcing. Find out more at www.restaurant-interlude.co.uk CULINARY EXCELLENCE Ashdown Park Hotel & Country Club in Forest Row, East Sussex, has reappointed executive chef Andrew Wilson to oversee the hotel’s extensive food and beverage services. This appointment comes as the distinguished Sussex country house hotel looks to build upon its outstanding reputation, offering a more relaxed dining atmosphere while retaining its high culinary standards. With over 30 years of experience in the hospitality industry, Wilson brings a wealth of knowledge and expertise to the role. His career highlights have included working in renowned establishments such as the one Michelin starred Drakes Restaurant in Surrey, the two Michelin starred restaurant at The Capital Hotel in Knightsbridge, London, and more recently working with Glyndebourne Opera. In his position of Executive Chef, Wilson will oversee Ashdown Park’s two-AA Rosette Anderida Restaurant – an award-winning dining room featuring seasonal à la carte options, tasting menus and innovative vegetarian and vegan options. He will also develop the dishes in the more relaxed Forest Brasserie – a welcoming and informal restaurant overlooking the hotel’s 18-hole par 3 golf course, located adjacent to its spa and indoor swimming pool. The Forest Brasserie delivers a tempting menu including fresh fish, salads, burgers and pizzas, all inspired by local produce and suppliers. Check out www.ashdownpark.com 150 YEARS YOUNG To mark the occasion of The Grand Hotel's 150th anniversary, the iconic Eastbourne seafront Hotel is hosting a spectacular event: 150 Years of Music, Monarchs and The Grand Hotel. Taking place from Friday 21st to Sunday 24th November 2025, this three-day celebration promises an immersive journey through the Hotel’s rich musical and royal heritage. Throughout the festival, guests will be treated to a curated programme of live classical performances, themed dining experiences, and engaging talks that highlight the hotel’s unique role in shaping cultural moments since 1875. The festival’s programme has been thoughtfully curated by artistic directors Stephannie Williams and Christopher Morley, known for their successful musical events at The Grand Hotel and Ashdown Park in recent years. Narration throughout the festival will be provided by esteemed TV personalities Kevin Whately and Madelaine Newton, who will offer guests insightful context and stories behind each performance. In addition to the musical festivities, attendees will be treated to specially crafted menus reflecting the royal banquets and culinary feasts served to distinguished guests throughout The Grand’s history – a real gastronomic journey through the ages. www.adamlynk.com COME ON IN The Signet Collection recently launched its fourth hotel, The Alfriston, nestled in the charming village of Alfriston in the South Downs. Our editor, Kelly, was delighted to attend the launch and has much to share. Welcomed with a glass of local sparkling Rathfinny wine, one of the venue’s partners, I settled down in the bar area to await the exciting official ribbon cutting ceremony. I immediately fell in love with my surroundings. Of course, everything being new and shiny had its appeal, but it was the effortless blend of luxury, comfort and breathtaking scenery that straight away won my heart. Admittedly, the sea mist did somewhat obscure the gorgeous views, but I was assured they were even more stunning on a clear day! Here, I got the first taste of the food available here at The Alfriston and Signet’s Signature teriyaki cauliflower popcorn is legendary for a reason. Sounds wrong, but trust me, it could not be more right! So, delicious I had to avoid the temptation to stop every server as they passed by to grab another one – leave some for everyone else Kelly! So, after drinks and nibbles we all headed out onto the terrace with the impressively long drive and front garden as our backdrop as we gathered in front of the 16th-century property. For the owners and venue staff, this was the culmination of just over a year’s work having bought the hotel, formerly Dean’s Place, in January 2024 and lovingly renovating the entire Grade II listed building. I was intrigued to take a venue tour with sales and marketing manager Caroline to see what The Alfriston has in store for its couples and guests. The hotel boasts 38 exquisitely designed bedrooms and suites, each individually styled with warm, playful colours, super-comfy mattresses, upcycled antiques and beautiful bathrooms. The bridal suite, Dene, is particularly spacious and ensures you plenty of comfort and luxury for your morning preparations. While the spaces have been modernised to incorporate every facility you could need, at no point do you feel the history of the place has been compromised. Being a history buff one of my highlights were the reception cabinets, decorated in the style of the Bloomsbury group in honour of nearby Charleston House, a charming local nod. The cabinet of sweeties and snacks available on every landing are also a thoughtful, playful touch, perfect if you’re after a midnight feast before you turn in! When it comes to tying the knot and ensuing celebrations, there’s three wonderful, licensed spaces to choose from. The sumptuously decorated 1554 Brasserie, named after the building’s origins, has a capacity of 50 and leads through to The Orangery, where the hotel’s guests usually enjoy their afternoon tea. Should you choose to hire it for your big day, you can say “I do” here before it’s turned around for your reception. It boasts a clever oval, moveable bar in the centre, where breakfast is usually served, making the space completely flexible for your requirements. From The Orangery’s surrounding windows, as well as the stunning South Downs views, you can also see the cute little licensed pagoda, where you can exchange vows al fresco with 100 guests seated on the lawn. The Sussex Suite is available for grander affairs with 160 guests and is also your backup ceremony space should the weather scupper your plans for al fresco “I dos” in the pagoda. It’s neutrally decorated giving you free reign to bring your theme to life. Plus, with three wedding packages to choose from, exclusive and non-exclusive, there’s plenty of opportunity to have your wedding your way. If you fancy a bit of well-deserved R&R during your stay, the signature Signet Spa, when it opens in February 2026, will feature a heated outdoor pool, steam room, hot zone, sauna, and three treatment rooms. It will partner with GAIA for a rejuvenating experience. Before I left, I enjoyed dinner in 1554 Brasserie, served by the wonderful and oh-so charming Poppy. I began with a bread and wild garlic butter appetiser, followed by a delicious starter of smoked potted trout. Choosing a main was difficult, but I opted for the rocket and parmesan risotto. Although I made enquiries about the Gooey Chocolate Nemesis for dessert, full of risotto I ultimately chickened out and plumped for the tiramisu – the best I’d tasted outside of Italy! So, if my dining experience is anything to go by, you’re in for a huge treat when it comes to your wedding breakfast! Rianna and Andrew created wonderfully a relaxed wedding day set in the beautiful Sussex countryside Images courtesy of Elizabeth Ruby Photography Countryside VIBES 22

Rianna and Andrew met while working together at a dental practice. “Andrew would come into work on particular days, and I’d always look forward to seeing him as he was so smiley and made me laugh,” Rianna remembers. The two realised they had much in common and after some persuasion he managed to get her to go on a date with him. Andrew chose their favourite restaurant in the beautiful town of Vejer del la Frontera in Andalusia, Spain, for the setting of his proposal. It would be a surprise for Rianna that nearly didn’t happen though since she wasn’t feeling well on the night they’d booked a table. Luckily, though Andrew was able to rebook for the next evening and all went perfectly. “We knew we wanted an idyllic barn-style venue as we love walking in the beautiful Sussex countryside,” Rianna explains. As soon as they set eyes on the views from Bury Manor Barn, they knew it was the venue for them. Amberley Castle was the first place they’d stayed together as a couple and being able to see it from the Barn felt like a full circle moment. The couple didn’t hesitate in securing their date for 3rd August 2024. Here, the bride tells us all about it... SETTING THE SCENE The stunning floral centrepieces pulled their joint boho, vintage and English countryside themes together. The bride’s brief to Laura at Wild Willow was to create a just-picked-from-a-meadow vibe and she delivered it to perfection. “I didn’t want anything too curated and envisioned flowers to reflect the season in the Sussex countryside,” Rianna explains. “Flowers were the main and only decoration we had, and they were beautiful.” The couple have been blessed to travel extensively together, so they decided to name each table after a destination they’d visited along with a photo of them there. Neither Rianna nor Andrew have a sweet tooth but love nothing more than indulging in cheese and biscuits after a meal, so a cheese tower wedding cake seemed fitting. They served it as their evening food along with some Cornish pasties made by their caterers. “Everyone loved this in the evening after a few drinks,” Rianna remembers. Taste Caterer spent a lot of time sitting down with the couple to discuss the foods and flavours they love when planning the wedding breakfast. “We’re real foodies, so we feel the menu really reflected us as a couple,” Rianna tells us. DRESSED TO IMPRESS Rianna looked every bit the ethereal, romantic bride in Lily of the Valley by Rembo Styling. “I loved the intricate lace in this dress, it suited my vision of something vintage, boho and floral,” she shares. She accessorised with a flower crown made by their florist, along with pearl jewellery borrowed from her mum and grandma, plus a long veil adding to the vintage vibe. Andrew wore a relaxed linen suit, setting himself apart from the rest of his party with the addition of a tie and waistcoat in the same shade of green as the bridesmaids’ dresses. “We wanted a relaxed look to fit the mood of the day,” Rianna says. The bridesmaids all wore different dress styles, which they chose themselves as Rianna was keen that everyone should feel comfortable and at their best. The only stipulation was the colour – a gorgeous shade of sage green. LET’S PARTY! During the drinks and canapé reception, a magician went down a storm with guests. In fact, the couple still get friends telling them they can’t work out how his tricks were done! The bride knows singer and guitarist Dessie through friends, so he performed following the ceremony too setting the perfect tone. “We were so pleased we chose to have live music for this part of the day,” Rianna says. During the evening, live band Blue Dakota entertained all assembled. “They knew just how to get everyone involved and the set list had something for everyone,” Rianna shares. “The lead singer is my maid-of-honour’s older sister, so it was really special having her there.” The newlyweds took to the dancefloor for their first dance to the sounds of 500 Miles by The Proclaimers. They chose the version from the film Sunshine on Leith which begins slow. “Guests recognised the song but couldn’t place it at first!” Rianna says. 23 REAL WEDDING

“It ended with them joining us on the dancefloor jumping up and down and singing along. That was a special moment for us.” MEMORABLE MOMENTS “We loved our ceremony, it felt so special and as soon as I saw Andrew my nerves disappeared and I just knew I needed to get to the end of the aisle to be with him,” Rianna remembers. “Our wedding party were just great,” the bride continues. “Our guests and wedding coordinator commented that ‘everyone needs a Mark (best man) and Jade (maid-of-honour) in their lives. They couldn’t have done more to make sure we had a perfect day. Our wedding coordinators Gemma and Sarah from Bury Manor Barn were also fantastic, we didn’t have to think about a thing, and we were so grateful for the genuine care and effort they put into making sure everything ran smoothly. We were sad to say goodbye to them!” REAL WEDDING 25

ROMANCE Relaxed Kit and Jack tied the knot at Hendall Manor Barns and styled their day in a fresh, oh-so modern palette of green and white Images courtesy of Mundial Photography Kit and Jack met while working together at The Cat Inn in West Hoathly back in 2018. As they got to know each other, their relationship blossomed from there. While on holiday in Sicily four years later, enjoying dinner in a beautiful rooftop restaurant, Jack got down on one knee. “It took me a minute to realise what was going on as I had absolutely no idea he was planning to propose,” Kit remembers. But after the initial shock wore off and she accepted, they were both able to relax and enjoy the rest of the evening watching the sun set over the hills. Having been for a few venue viewings the couple gained a good idea of what they did and didn’t want in the setting for their big day. As soon as they found Hendall Manor Barns, they knew it was right for them. “From our first meeting with Nicola we felt relaxed and comfortable and knew she and her team would be able to facilitate the perfect day for us,” Kit explains. So, with the date firmly in the diary for 3rd September 2024, planning got underway in earnest. Read on as the bride Kit shares her treasured memories of the wedding day... 29 REAL WEDDINGS
