42 GINGER BEAR BAKERY I think the ruffle trend is slowing down and will eventually be left in 2024. I made lots of the ruffle-style cakes last year, but I’m not seeing it as much in 2025 orders. There are lots of exciting new trends coming through for 2025; the vintage styling is still huge and lots of my couples are opting for this, choosing to complete their cakes with cherries or bows! The semi-naked is relatively self-explanatory, but the palette knife effect is an undiscussed classic. To get this effect, you simply run a palette knife along the cake to create texture and patterns in the frosting. These are both styles that have a timeless elegance to it, but I foresee them being overshadowed by some exciting developments. I have noticed a new trend starting to gain momentum: the use of acrylic cake separators. This innovative design element involves incorporating a transparent acrylic layer between the tiers of the cake. The acrylic separator not only adds a modern touch but also provides an opportunity to showcase flowers or even incorporate LED lights. This trend creates endless possibilities for customisation and creativity, and I am excited to witness its evolution.
