Previously a business journalist, she has been creating luxury wedding cakes in buttercream since 2012. At the time the norm was rustic and plain creations, dressed with fresh flowers, which came as an alternative to the sugarpaste-covered fondant weddings cakes that dominated the market. Emma succeeded in driving the trend forward using piping, painting and sculpting techniques to elevate her bakes to luxury, decorative and flamboyant creations.
