Dessert is the course where couples often have different tastes – one loves fruit, the other chocolate – so this makes it totally about them.” A cheeseboard is a great choice for the evening, and the selection of cheeses is a fun way to inject even more personality. “We always use lovely local cheeses, but we can also give a nod to your home towns. For example, you could include a traditional Red Leicester, a Black Bomber from Wales, or even some fabulous Yarg from Cornwall. This will mean a lot to the family who are recognised, creating a talking point. We’ve also been known to make a chutney to accompany the cheese from some of the family’s homegrown apples,” she says.
