Whatley Manor’s Niall Keating collaborates with Salcombe Gin With gin now being one of the most popular alcoholic drinks served at weddings and mobile gin bars a big trend, Michelin-starred chef Niall Keating of Whatley Manor in Malmesbury, Wiltshire has collaborated with award-winning distillery Salcombe Gin in Devon to create a world’s first gin distilled with a liquid botanical, the Salcombe Gin Voyager Series ‘Restless’ (46% ABV 50cl), £65. Restless is the fifth limited-edition release in the award- winning Voyager Series from Salcombe Gin and is inspired by Niall’s passion for Asian cuisine. It has been distilled with Niall’s very own blood orange kombucha, that adds a delicate sweetness, marking the first time a gin has ever been created with a liquid botanical. Made with love at Whatley Manor, it’s carefully balanced with the traditional use of Macedonian juniper, fresh lime peel and orris root complemented with kaffir lime leaf, Mexican orange blossom and finally, Citra hops - a subtle nod to Niall’s time spent in San Francisco. Executive chef Niall tells us, “we have long admired the top-quality gin that Salcombe Distilling Co. produces, and especially the premium collaborations they have done to date so when I was approached by Salcombe Distilling Co. earlier this year, I felt they were very much the right calibre of distillers to work with on a bespoke gin for Whatley Manor.” He adds: “I was curious about the production process and how I could introduce some of my more intriguing ingredients to develop a stand-out spirit that would be a reflection of my culinary journey. I’ve learnt so much about the fine detail that goes into the creation and distillation process, and I believe together we have crafted a unique and delicious gin.” Niall Keating, who was recently crowned Champion of Champions on BBC Two’s Great British Menu, has been acclaimed for his daring and innovative cooking. Focusing on seasonal ingredients such as apples and blackberries, they are the perfect remedy for those post- summer blues: COTSWOLDS APPLE AND BLACKBERRY CRUMBLE • 45ml Cotswolds Dry Gin • Eight blackberries • 15ml cinnamon liqueur • 12.5ml lime juice • 50ml apple juice • 8ml orgeat (almond syrup) Coat the martini glass with the oat crumble. Muddle eight blackberries in a Boston tin, fill with ice and add all the other ingredients. Shake and strain into a martini glass and serve. Garnish with an apple and a blackberry.
