The accolade is the latest honour for Terri since she first started Hadleigh-based Erivica Cakes. On hearing the news she said, “To say I was surprised is a massive understatement and it has given us a massive boost in positivity.” Terri was first inspired by her mum Erica who used to make wedding and celebration cakes for family and friends as a hobby. After she died 16 years ago, Terri inherited all her tools and equipment and gradually taught herself to use them. “I love the fact that I still learn something new every day! My ideal cake to make is something that is completely personal. I like to have as much information as possible about my customers so that I can feature elements of their lives and personalities to make it unique to them.
