Meet Penelope Grundon of Penny Bakes Where did your journey into cake creation begin? It all began for me about seven years ago, when my neighbour asked me to make her daughter’s wedding cake – an Australian-themed design with handmade koalas on it. I was hooked! What’s your favourite thing about working in the wedding industry? I love going through the whole process with my couples, from discussing their initial ideas and supplying tasters in my studio to drawing the design, choosing flavours and delivering on the day. What sweet treat do you turn to for comfort? Although I make cakes, I don’t have a sweet tooth! However, I do always enjoy a hot cross bun. How can couples adapt their cake design for a smaller wedding? I would suggest a two-tier cake to cater for an intimate wedding of 15 people, but keep the original flowers and style of cake they have chosen. During my time working in an office, my colleagues and friends would often ask me to make cakes for them. When I went on maternity leave I used the time to explore this business a little further. When it came to returning to work, everyone encouraged me to follow my dream of making wedding cakes instead. What’s your favourite thing about working in the wedding industry? I love the people in our industry. The amazing couples I get to create wonderful cakes for and the incredible local suppliers – there’s a huge amount of talent out there. What sweet treat do you turn to for comfort? I’m a complete chocoholic; there isn’t a day that goes by when I don’t eat chocolate! How can couples adapt their cake design for a smaller wedding? I believe any cake design can be made into a single tier or fewer tiers.
