Justin Mullender, joint owner of Pig & Whistle Restaurant (with his husband Brendan) talks to An Essex Wedding Magazine about how intimate weddings are bringing a new sense of warmth and style to the big day. Do you think intimate weddings are a long-term shift or more of a current trend? We see it as a long-term shift rather than a passing trend. Couples seem to be thinking more about how they spend their budget and that naturally leans towards smaller, more meaningful celebrations. An intimate wedding at somewhere like Pig & Whistle Restaurant, allows couples to focus on what actually matters to them, whether that’s exceptional food, a beautiful setting, or simply being present with only their closest friends and family. Many couples are placing greater emphasis on food and drink—how has that influenced the way venues design their wedding experiences? Food and drink have really moved to the centre of the wedding experience. It’s no longer just one part of the day, it’s often the defining part of it, and that’s why couples choose Pig & Whistle Restaurant. Our AA 2 Rossette awards for culinary excellence mean that couples can design their wedding much more like a dining experience than a function. At Pig & Whistle Restaurant, couples can choose from a range of dishes including Beef Wellington, Essex oysters and chocolate fondant. It’s much closer to a restaurant experience than a traditional wedding format, and that’s exactly what couples are drawn to. What kinds of dining experiences are couples asking for now? What couples are really asking for is something that feels personal. With smaller weddings, many lean towards multi-course menus with thoughtful pacing, allowing guests to properly enjoy each dish and the conversation around the table. Some couples lean towards generous sharing platters, while others opt for a selection of seasonal canapés served as guests enjoy drinks on the terrace. The common thread is that couples want their guests to leave talking about the food as much as the day itself. What elements help create a memorable atmosphere for intimate weddings? At Pig & Whistle Restaurant we pride ourselves in creating the perfect cosy, romantic and intimate atmosphere every day, which is why we’re the perfect setting for an intimate wedding. Our 16th century building with low ceilings, soft lighting and a sense of history creates its own atmosphere. We enhance that with long white linen tables, vintage furniture, real wooden floors and candlelight. Our award-winning service is relaxed, attentive and personal, so with fewer guests, it allows everything to feel effortless. One of the most defining moments at Pig & Whistle Restaurant is the sunset on the terrace, where golden light across the surrounding fields softens the pace of the day, our late summer purple sunsets can be magical. What’s the biggest misconception about intimate weddings? Some might think that an intimate wedding is more casual, but at Pig & Whistle Restaurant that is completely the opposite. Couples can create something that feels more refined, more atmospheric and more personal than a larger event would allow. With fewer guests, all the personal details of a wedding also become more noticeable - the food, the setting, the lighting, the service—and that’s what creates something truly memorable. The biggest misconception is that smaller means less impactful. In reality, it’s often the opposite. What’s one intimate wedding you’ve hosted that perfectly captured this trend? One that really stands out was a 30-guest wedding where the couple wanted the day to feel like an elegant, relaxed dinner party from start to finish. The ceremony took place indoors under our blossom and fairylit ceiling, followed by champagne on the terrace, then three courses including panfried scallops, lamb best end and lemon curd with homemade beeswax ice cream, all from our seasonal menus. It didn’t feel like a traditional wedding, but a celebration that flowed effortlessly, which is exactly what more couples are now looking for. The dinner party wedding BOOK IT!
