It’s your day – so why not opt for a cake made of incredible cheese instead? “We allow each couple to pick the cheeses that they want for their wedding cake,” says Ann-Louise Scott from the Northumberland Cheese Company (www.northumberlandcheese.co.uk). “If of course you ask for our advice, we’re here to help, but the most important thing for us is that you’re both happy with what you’ve ordered and can enjoy your day. We have four different sized cakes available, which cater for 60 up to 160. Options available include Oak Smoked – traditionally smoked over oak embers – Northumberland Nettle, Northumberland Original, Northumberland Chilli, Elsdon goats’ cheese and Redesdale sheep cheese. We also offer seasonal specials, which our wedding cake consultant will let you know if they’re available for your cake.” DOS OR DON’TS? “Do think about when you plan on serving your cake. Sometimes people serve it too late, or the venue may forget about displaying it, which results in cheese being left over. Also, please bear in mind that we do not decorate them, as each couple wants something different. Instead, why not share miniature varieties of the treats you love with your guests instead? Think piles of waffles, melt-in-the-mouth macarons, cake pops and even a huge pile of profiteroles – it’s your day, so you can choux what you like! “Dessert tables are a hugely popular option at the moment for those who either don’t need or just don’t fancy a big wedding cake,” says Vanilla Teas cake-maker Helen Edwards (www.vanillateas.co.uk). “A small cutting cake surrounded by a selection of delicious bite-size sweet treats looks amazing, and you can really let your imagination run wild with the cake stands – think different heights, shapes, and sizes to add interest and create an amazing display. We offer a large choice of goodies on our dessert tables (over 20 choices!) with the most popular options including brownies, cake pops, mini Victoria sponge cakes and doughnut towers. Some options, such as meringues and mousses, are gluten-free, while other options can be made to anyone’s dietary requirements.
