Weddings worth savouring Discover the ultimate celebration of culinary creativity in modern weddings Once upon a time, wedding food was primarily intended to keep guests fed and was often predictable, uninspiring, and somewhat boring. You’d expect a protein, a starch, and maybe a salad to be a safe option. Luckily, we’ve entered a new era where food takes centre stage with bold flavours, creativity, and plenty of heart. It’s a beautiful statement of the couple’s journey, with their own preferences being essential. It’s not just about what’s expected; it’s about food that represents and expresses the lovebirds. Celebrating culture through food We’re in a remarkable era of celebrating heritage, and this is shining through beautifully in today’s weddings. Couples are embracing their cultural roots, utilising food as a vibrant form of expression. Through thoughtfully curated menus, they’re honouring family traditions and blending their backgrounds to create something truly personal, meaningful, and delicious. These dishes are more than just crowd-pleasers; they’re stories on a plate, paying tribute to the past while celebrating the present. Here are just a few standout examples: • A Persian and Jewish couple serving saffron chicken with preserved lemons, paired with latkes topped with crème fraîche and caviar – a beautiful nod to both cultures. • At a Korean and Brazilian wedding, guests enjoy bulgogi sliders and pão de queijo as passed hors d’oeuvres, effortlessly blending savoury flavours from both cuisines. • A couple with Indian and West African heritage offers a hybrid buffet featuring rogan josh, jollof rice, fried plantains, and paneer tikka skewers – a bold, flavourful tribute to their roots. Food at weddings isn’t just about presentation or flavour, it’s about connection. It has the power to transport us to another time, evoke cherished memories, and spark meaningful conversations. That’s why many venues and catering companies are now working with cultural specialists, ensuring authenticity in both technique and flavour. Chefs are increasingly blending beloved traditional recipes with modern elements, creating exciting and innovative menus without losing the soul of the original dish. Whether it’s a seamless blend in the wedding breakfast or highlighting different cultures across courses or throughout the day, the possibilities are endless. Food as experience Weddings today are no longer defined by a simple menu; they’ve become full-scale culinary journeys that unfold across the day or even the entire weekend, appealing to all the senses. More than just food, the dining experience often doubles as entertainment, and for good reason. Imagine guests gathering around a live paella station, watching a flambé station erupt in flames, or enjoying a sushi chef rolling fresh maki to order using the couple’s favourite ingredients. Many of today’s most creative dishes are being reimagined as immersive décor, adding stunning visual impact while also being delicious. Think vibrant grazing tables overflowing with wheels of cheese, fresh fruit, artisan chutneys, and a variety of crackers topped off with edible flowers for a touch of elegance. For something whimsical, hanging food stations suspended mid-air invite guests to help themselves to beautifully presented bite-sized treats. Interactive culinary moments are also trending. tossed inside a molten cheese wheel is a dream for carb lovers. For the more adventurous, foraged and fire-based cooking experiences are making a big impression. Picture chefs cooking over open flames, filling the air with mouthwatering aromas and creating an immersive, unforgettable moment. Bars, cocktails, and all things poured We can’t talk about catering without diving into all things drinks! There are so many ways to showcase your personal taste and impress your guests. Why not offer “His and Her” cocktails, two favourite signature drinks that add a fun, personalised touch to the day? Or consider a DIY margarita station complete with salt rims, a variety of fruit syrups, and fresh garnishes. Incorporating seasonal flavours is another way to elevate your drink menu. Think delicate floral notes in spring, bright and fruity blends in summer, warming spices in autumn, and rich, comforting flavours for winter. Many couples are also exploring unique liquid experiences to wow their guests. Whiskey tasting flights paired with curated food bites, mimosa walls, and pour-your-own Prosecco bars are hugely popular. And who can resist a glamorous Champagne tower? Dessert reinvented Wedding cakes remain iconic showstoppers, but today’s couples are taking a more creative, personalised approach. Traditional tiered cakes are still loved, but we’re seeing a growing trend toward mini cakes served per table, each in different flavours, offering variety and charm. Deconstructed cakes and elaborate dessert tables are also on the rise, brimming with an assortment of sweet treats. Think brownies, blondies, cookies, cupcakes, macarons, cake pops, éclairs, and more. For ice cream lovers, why not bring in an ice cream bike serving a range of flavours? Or take it up a notch with a rolled ice cream station, where a cream base is poured onto an ice-cold slab, mixed with toppings of your choice, then rolled up fresh for an interactive experience kids and adults will love. Other playful additions include doughnut walls, S’mores bars, waffle stations, chocolate fountains, and towering stacks of cookies, all adding a whimsical, delicious touch to the celebration. Not a fan of sweets? No problem. Swap the sugar for a show-stopping cheese cake – literally! Stack wheels of your favourite cheeses into a tiered “cake” and surround it with fruits, chutneys, and artisan crackers for a savoury centrepiece. Weddings beyond one day As wedding weekends become increasingly popular for couples, catering is no longer limited to just the big day itself; it’s an experience that can stretch across multiple events. Start the festivities with a welcome party, perhaps a lively taco and tequila garden gathering to set a fun, casual tone. For the evening, consider a mezze board and wine tasting experience, or a cosy family style pasta night. After the wedding, once your guests have had a good night’s rest, treat them to a relaxed farewell brunch. Serve a mix of fresh fruit, fluffy pancakes, pastries, and a variety of hot dishes. These extra moments not only keep everyone well-fed, but they also help create a welcoming atmosphere where loved ones can unwind. Small but mighty On the opposite end of the spectrum, micro weddings are also rising in popularity, with couples choosing to rechannel their budgets into elevated, over-the-top catering experiences. With a smaller guest list, chefs can craft bespoke, meticulously planned menus. Fewer plates mean more attention to detail. Expect dishes adorned with gold leaf, handbrushed sauces, and delicate edible flowers with each plate. Think special touches, like edible perfume spritzes infused with vanilla bean and rose, or aromatic elements like peach basil or Earl Grey smoke to enhance desserts and cocktails. Every course becomes a moment of edible art, thoughtfully composed to tell a story, making the dining experience just as memorable as the ceremony itself. Multi-course fine dining experiences with wine or cocktail pairings for each dish will turn dinner into a curated journey. The bottom line As the day winds down, what guests will remember beyond the vows and the dancing are the unforgettable flavours and the care you put into every bite. Whether your wedding is grand or intimate, traditional or wildly creative, the food has the power to leave a lasting impression. So, focus on what truly reflects you as a couple and partner with experts who can bring your vision to life with passion and precision. Go bold. Be intentional, and above all, create something that’s deliciously, unapologetically yours. unsplash.com@tuncerdogu unsplash.com@nmwbrands 26

TOP FOUR TIPS FOR PICKING THE PERFECT WEDDING CATERER 1 Begin by searching for companies with a proven track record of bringing visions to life. Hop online and search for local providers, browsing their websites and social media to get a feel for their style, services, and past work. Be sure to read reviews to learn about other couples’ experiences with their service. Check whether the team can provide food throughout the day and accommodate dietary requirements. It’s also a good idea to ask your venue for recommendations. Choosing a company that’s not only reliable but also familiar with the venue layout and logistics can give you valuable peace of mind. 2 Always schedule a tasting session to meet the team and sample their work, ensuring it aligns with your wedding vision. Think of it as a mini interview and a sneak peek of your special day. You’ll get to experience the freshness of the ingredients, explore how customisable the menu is, and see if the presentation matches your style. 3 Request a detailed quote that clearly outlines everything included to avoid any hidden costs later on. Some companies provide just the food, while others offer full-service packages that include setup, waitstaff, linens, rentals, and cleanup. Be sure to ask about any additional fees, such as service charges, gratuity, or travel expenses. 4 Delicious food is essential, but exceptional service and clear communication are just as important. Catering plays a major role in your wedding, so it’s crucial to work with a team that’s responsive, reliable, and easy to communicate with. Look for a caterer who’s willing to collaborate with you to bring your vision to life and who provides a clear point of contact throughout the process. Be cautious of vendors who give vague answers, lack a defined timeline, or have unclear roles within their team — these can be red flags. unsplash.com@karibjorn unsplash.com@victoriakosmo CATERING 27

Love at first swipe Sophie and Kay tied the knot surrounded by style, laughter and unforgettable family moments. Images courtesy of Hollie Randall Photography These two lovebirds first met the way many modern couples do, online. A simple swipe on Tinder eventually led to a ring on a finger. Their first date in Central London confirmed that they were soulmates. From that day onward, they never spent a single day apart. After just under a year together, Kay proposed to Sophie during a holiday in Tenerife. Kay was shaking with nerves, but still managed to get down on one knee. Of course, it was a big “yes!” as there was never a doubt for the pair. THE LOCATION The couple chose to marry at Ware Priory. Other venues they had visited simply didn’t feel right, but this venue was recently updated and decorated to a modern standard. It was perfect with a relaxed and welcoming atmosphere, especially thanks to the staff members Kerry and Rebecca who were happy to accommodate every idea. The team recommended suppliers for everything, from food to décor to garden games, making the entire planning process simple and seamless. Rebecca ensured the day ran smoothly from start to finish, never missing a detail and keeping everything on schedule. The venue’s grounds offered a private, quiet setting that felt like their own secluded estate, ideal for wedding photos. The ceremony room had a soft, church-like feel with stained-glass windows and a long aisle. After the vows, the newlyweds stepped outside to their loved ones beneath an arch bursting with freshly blossomed flowers. SETTING THE SCENE The wedding embraced a sage-green colour palette, one of the couple’s favourite colours and perfect for the season. With the help of Victoria Webb at Victoria’s Events, the theme came to life through centrepieces, backdrops, uplighters and sage chair and table sashes. Victoria decorated the entire room ahead of time, ensuring every detail matched their vision. Flowers were provided by The Herts Flower Girl. The arrangements featured subtle white roses and foliage, and each piece for the bridal party was crafted to complement the others. The team even delivered everything to the doorstep, carefully labelled to avoid any stress on the morning of the wedding, especially helpful with more than eleven buttonholes to organise. Other décor touches included tequila bottles, confetti bags, name cards, glasses, frames and garden games, which were a mixture of handmade items, personal buys and Etsy finds. FOOD FOR THOUGHT The couple opted for an informal buffet-style feast, choosing Teppanyaki, Greek and Caribbean dishes provided by The Chef’s Table in Ware. The food was a huge hit, with guests still talking about the curried goat. After the ceremony, guests enjoyed a shot wall featuring Casamigos Reposado tequila, Kay’s favourite, that went down far too easily! The evening finished with a buffet that was devoured without hesitation. For dessert, cupcakes acted as the wedding cake, with flavours including red velvet, chocolate and banana bread, all created by Love the Cake. DRESSED TO IMPRESS Sophie wore a classic off-the-shoulder dress by Essense of Australia, featuring a high slit on the left and buttons trailing down the back. She paired it with a pearl-covered veil and ivory shoes, all purchased at Burr Bridal in Cambridge. She had saved a screenshot of that exact dress when she first began browsing REAL WEDDINGS 31
