There’s a wide range of foods to look forward to this year, with couples choosing everything from family-style Italian feasts to barbecue Cornish monkfish and mussels as well as the more traditional plated wedding breakfast. Founders Abi and Natalie tell us how choosing local, sustainable produce is very popular for weddings and couples want to focus on having no (or minimal) waste. By using every part of the ingredients, the team are able to make creative dishes which capture the full flavour of each product. As everything is made from scratch, nothing gets left behind – homemade marmite is even made from leftover bread! New dishes on the menu for weddings this year include a delicious beetroot and local goat's cheese tart served with a crispy Rye cracker pastry, and chicken liver parfait teamed with chorizo and apple jam and a homemade herb soda bread. Light, fruit-based desserts are also proving popular. Alongside Eton mess cheesecake made with a strawberry and vanilla ripple cheesecake, there's torched Italian meringue served with white balsamic-dehydrated strawberries, hibiscus-dusted meringue shards and a strawberry puree made from all the trimmings.
