AWARD WINS AT UGLY BUTTERFLY Ugly Butterfly’s sous chef, Connor Blades, won UK Young Chef of the Year 2021 at the prestigious Young Chef Young Waiter UK 2021 competition. Junior sous chef Ali Halbert also performed excellently in the competition final, achieving second place, demonstrating exceptional talent in the kitchen at Ugly Butterfly in St. Ives, Cornwall. The competition is renowned for recognising some of the best talents UK hospitality has to offer and was judged by, among others, Tom Kerridge and Ugly Butterfly’s Adam Handling as head chef judge and Simon King as head waiter judge. Winner Connor’s inspiration comes from his surroundings in Cornwall and he uses innovative techniques to create delicious dishes that take advantage of the huge variety of fresh and seasonal local ingredients. Adam Handling tells us, “Judging chef of the year has been super exciting. I didn’t have voting rights in the competition as two of my team were in the final ten, so it makes it even more special that my fellow judges not only picked Connor as the winner but Ali in second. Connor really cares about the industry, cooks amazing dishes and works beautifully in a team. I always think of the relationship between chefs and waiters as being quite romantic, and the partnership he created with the waiter team was inspiring. Connor Blades is the future of hospitality, and I know for a fact that he’s the future of my restaurants.” A new menu has been launched at the restaurant and bar in keeping with the restaurant’s ethos of offering sustainable, local luxury British food, inspired by Cornwall. Guests can enjoy dishes such as Cornish crab with apple and jasmine. All seafood used in the restaurant is caught locally from fishermen in St. Ives and the signature dish at Ugly Butterfly is lobster with beef fat. Other new dishes include mushroom agnolotti with parsley and garlic, and squash with hazelnut and sheep’s yoghurt which use ingredients from regenerative Cornish farm, Trenow Fields. In keeping with the sustainability behind the menu at Ugly Butterfly, any waste from the kitchen is used by the bar team, maintaining the momentum towards being as zero-waste as possible. Bar manager Josh Linfitt has developed an innovative new cocktail menu in which every drink is crafted using some by-product from the kitchen. For example, the new Faltown Martini uses once-wasted oyster shells to infuse vodka and harness the flavour of the ocean, served straight out of the freezer. Lucinda and Adam met online. “I was attracted to his beard,” Lucinda tells us, “and I loved her legs!” Adam adds. The couple started dating and became engaged during a surprise proposal on the beach in St. Ives, Cornwall. “It was a wonderful moment and the weather was perfect,” Lucinda tells us. “Some members of the public nearby clapped and cheered us on which was very special!” The couple decided to get married at The Minster Church of St. Andrew Plymouth and host their reception at the Treasury café, bar and restaurant next door. “The church is breathtaking and both venues are very centrally located which was perfect, especially for our older guests,” Lucinda tells us. SETTING THE SCENE Lucinda and the bridal party arrived at the church in a classic Bramwith car. “I was so nervous and excited before our ceremony and couldn’t wait to walk down the aisle! The church looked magical and everyone was beaming with happiness so we exchanged our vows surrounded by plenty of love and support. All of our guests sang the hymns enthusiastically with Hosanna being a highlight!” At the Treasury restaurant, Lucinda and Adam decided to have their top table placed along the back wall so that all of their guests faced them and the view of the church behind. “We gave our guests wildflower seeds from Marie Curie as favours with the sentiment of letting love grow,” Lucinda explains. “We had laser-cut rose gold place names and tea lights placed in vintage-style gold, copper and rose gold holders and we displayed elegant tall vases trimmed with crystals and filled with white hydrangea, wisteria and eucalyptus on the tables. We also had a flower wall and a pretty rose and eucalyptus garland which our guests loved.” The couple chose a showstopping five-tier cake which took centre stage. “We combined fruit cake with a vanilla sponge layer and a chocolate sponge cake,” Lucinda says. “The dinner menu was delicious and we catered for our guests who were vegan, vegetarian and pescatarian.” REAL WEDDINGS 27

LOOKING THE PART Lucinda wore an ivory wedding dress by St Patrick called Musset. “I tried on seven styles in total and this was the first one that I instantly fell in love with!” she tells us. “I loved the Bardot-inspired neckline, sleeves and the fact that it had pockets!” Adam wore a navy suit with a pink tie and pocket handkerchief and his groomsman wore the same. “Our bridesmaids looked stunning in their Bardot-inspired full-length grey dresses,” Lucinda says. TIME TO CELEBRATE “We hired a band called The Harbour who was fantastic from start to finish,” Lucinda tells us. “The crowd participation was amazing! Everyone in the venue was dancing, including the staff! The band performed an acoustic set while we ate which created a wonderful atmosphere.” REAL WEDDINGS 29
